Method
- 01
Finely mince 4 cloves of garlic. Open the two packs of pickled long beans and keep them ready to use. The packaged beans do not need to be rinsed or prepared.
- 02
Heat 3–4 tablespoons cooking oil in a wok over medium-high heat. Add 400–500 g minced pork or beef. Break the meat apart quickly with a spatula. Stir-fry until fully cooked, lightly browned and most of the liquid has evaporated. Add the minced garlic and continue cooking until fragrant.
- 03
Add the two packs of pickled long beans and stir-fry with the meat for 2 minutes. Add 1 teaspoon oyster sauce and ½ teaspoon sugar. Add ¼–½ teaspoon MSG if using. Stir-fry for another 30–60 seconds. Taste before adding salt. Add ¼ teaspoon salt only if needed. Finish with scallions and serve hot.
